Vij’s Family of Restaurants Expands to Seattle PDF Print E-mail

VANCOUVER — The popular Vij family of restaurants are expanding south of the border with Shanik, a new Indian-fusion restaurant concept slated to open in Seattle in November.

Vij’s co-owner Meeru Dhalwala, who has been managing the kitchens of Vij’s and Rangoli in Vancouver, is spearheading the project.

She’s partnering with Oguz Istif to run the new restaurant, which will open in the South Lake Union area of the city.

Shanik’s menu will differ from the Vancouver eateries Dhalwala co-owns with her husband, Vikram Vij. "There'll be no lamb popsicles in Seattle. They'll need to come to Vancouver for it. It is a third independent identity,” Dhalwala was quoted as saying in The Vancouver Sun, of the menu, which may have up to 40 per cent vegetarian fare.

The restaurant, which will have approximately 70 seats, will have the feel of a Himalayan guesthouse and be LEED certified.
