Four Seasons Whistler to Unveil New Restaurant |

WHISTLER — This past February, the world’s best alpine athletes descended on Whistler to test their skills at various snow-bound activities, with the lofty goal of hopefully coming out on top.
Starting next month, locals and visitors in the mountain village will have a new way to satisfy their après ski appetites, too.
The Four Seasons Resort Whistler's new restaurant, Sidecut, will soon introduce what the hotel is calling “a modern steak concept.” Scheduled to open June 19, the resto is named for the distinctive curved form of skis as well as a cut of beef, the restaurant promises diners "steak with an edge."
Offering a contemporary twist on the classic steakhouse, executive chef Scott Thomas Dolbee and chef de cuisine Edison Mays have created a dinner menu showcasing a variety of steak and seafood dishes. Sidecut will use only the finest-quality steak available, specifically the top two per cent of Canadian beef that is aged 40 days. And those steaks will be cooked on an 1,800-degree infrared grill — which uses 100 per cent infrared heat to cook meat evenly and ensure it retains its own natural juices.
Diners can choose from regional meat specialties such as double-cut Sterling pork chops, B.C. Fallow venison loin and bone-in, braised bison short ribs. And with both the Pacific Ocean and many mountain lakes in its backyard, Sidecut’s seafood entrée items will include Queen Charlotte Sound halibut, wild Chinook salmon and Egmont spot prawns, among many others.
During the summertime, guests will be able to dine outdoors on the restaurant's spacious heated patio, while live music three to four nights a week creates a lively atmosphere.

VANCOUVER — Top Table restaurants, the hospitality group that owns Vancouver and Whistler hotspots Araxi, Blue Water Café and Raw Bar, CinCin and West, have nabbed an impressive haul in the recently announced Vancouver Magazine 2010 Restaurant Awards.
A panel of 19 judges dolled out the kudos to British Columbia’s leaders in the restaurant scene at the Sheraton Wall Center on May 18.
Among Top Table’s top takes was Araxi winning gold for Best of Whistler; Blue Water Café and Raw bar taking home gold for Best Restaurant, Chef of the Year for its kitchen maestro, Frank Pabst, and another gold for Best Seafood; CinCin snagged a Best Last Course gold; and West was honoured with a Best Service gold.
Top Table proprietor Jack Evrensel said, “I would like to salute the excellence of all the winners, and the brilliance with which they represented our province to the world during this Olympic year. In particular, I would like to recognize our culinary and service teams at Top Table for their remarkable achievements during the last twelve months. New De Dutch Opens in Vancouver |

SURREY, B.C. — Coinciding with the company’s 35th anniversary, De Dutch Pannekoek House Restaurants Inc. has opened a new location at 410 West 2nd Avenue (at Yukon Street) in Vancouver.
The restaurant is the second new De Dutch location to open this year and the chain’s first new restaurant to open in Vancouver in 15 years.
“We are so pleased with our newest restaurant,” said Bill Waring, president, De Dutch. “We had been looking for the perfect location on the west side of Vancouver for our award-winning franchisees Alan and Delene George for a long time and we finally found it. We are thrilled.”
Sales for the De Dutch system have grown in B.C. since the franchise was founded in 1975 and, even with the economic challenges of the past year, current franchisees are optimistic of solid growth in the future leading to their increased investment in the franchise. The next, new De Dutch restaurant to enter the system will be located in Columbia Square in New Westminster, B.C. It is scheduled to open next month by new De Dutch franchisees, Marie and Tandrea Jang.
The 35-year old De Dutch franchise has 19 locations in B.C.’s Lower Mainland, Vancouver Island, the Fraser Valley, the Okanagan Valley and Cariboo. While offering dinner at its Strawberry Hill location, De Dutch Pannekoek House specializes in breakfast, brunch and lunch, giving customers a unique blend of European ethnicity in its menu items. The Pannekoek, a 12-inch Dutch-style pancake, is the company’s signature dish and continues to draw loyal customers.
