CALGARY — Calgary’s growing culinary network is branching out again to spread the word about sustainability, as Sal Howell and her chef, Andrew Winfield, welcome guests to a boat-to-plate Ocean Wise dining experience at River Café.

The May 29 event’s guest chefs will include Robert Clark, Paul Rogalski (Rouge Restaurant, Bistro Rouge) and Geoff Rogers (Top Chef Canada).

Brenan_MadillCALGARY — Brenan Madill will spend the summer practising his technique as he prepares to represent Canada at the 2013 Concours International des Jeunes (International Competition for Young Chefs Rotisseurs), held in Istanbul in September. He will join chefs under the age of 27 from around the world to compete in a black-box challenge.

In the La Chaine des Rôtisseurs-sponsored event, competitors will have four hours to create a menu and three-course meal for four people, using only ingredients in the black box.

Chef_Martin_LuthiBANFF, Alta. — After 40 years as Fairmont Banff Spring’s executive chef, Martin Luthi is hanging up his toque, reports the Calgary Herald.

A Switzerland native, Luthi worked in hotels and cruise ships in Europe before moving to Canada.

EDMONTON — The city of Edmonton is a breeding ground for restaurant concepts and entrepreneurial spirit, where Boston Pizza, Earls, Pizza 73, Booster Juice, Wok Box, Famoso Neapolitan Pizzeria, Sorrentino’s and Caffé Sorrentino began, reports the Edmonton Journal.

“If you’re in Toronto or Montreal or Vancouver and you mentioned a name like Earls, they would be quite surprised that it started in Edmonton,” said Paul McElhone, executive director of the University of Alberta School of Retailing.
