VERONA, N.Y. — The American Culinary Federation’s (ACF) 2013 Northeast Regional Conference is underway in Verona, N.Y.

Themed “Experience the Power of Connection” more than 400 chefs, students and foodservice professionals are registered for the culinary event, which offers workshops, a tradeshow, culinary competitions and other activities, including educational programming leading to certification as well as networking opportunities.

Boston Student Wins San Pellegrino Almost Famous Competition PDF Print E-mail

NAPA VALLEY, Calif. — Kristen Thibeault, from Le Cordon Bleu Boston, nabbed the title of Almost Famous Chef at the 11th annual edition of the competition, which was founded as a mentoring program to connect top culinary students with established chefs.

"I can't even believe it happened with the many other talented chefs here," said Thibeault, who was also the People’s Choice Award recipient and prepared porcini-crusted vegan ‘sweetbreads’ made with gluten meat. "Now, I want to [become] the best chef I can be; be an amazing spokesperson and further my culinary career."

Qdoba Mexican Grill Primed to Expand in Canada PDF Print E-mail

DENVER — Qdoba Mexican Grill, a U.S. fast-casual Mexican concept, has announced plans to expand its franchise operations in Canada, following the recent opening of its first unit in Brandon, Man., and a new unit in London, Ont., set to open March 18.

The company plans to open 70 to 85 locations in North America in 2013.

fyi_food1CHICAGO — Rising meat costs have prompted Chicago-based research firm Technomic to release an update on its “Center of the Plate: Beef & Pork Consumer Trend Report.”

"Rising prices for beef — and to a lesser degree, pork — will have direct implications for operators and suppliers through 2013," said Darren Tristano, VP, Technomic.
