The Dark Ages

Last February when Chocoatl Chocolatiers opened in Vancouver’s Yaletown, cocoa fetishists oohed and aahed over the 800-sq.-ft. shop (with seating for 20). They were mesmerized by a machine that burbled and sputtered as it shot forth torrent after torrent of intoxicating streams of hot chocolate. And what flavours, what preparation. No unctuous syrup or vile powder in sight and none of that cloying sweetness — just real chunks of chocolate melted into steamed milk.
