Calgary’s meat-and-potatoes menus have evolved significantly over the past 20 years. While steakhouses are still a big part of the culinary landscape, today Cow Town diners might also order a chicken and pancetta flatbread pizza with ancho chili pesto crust, medallions of Northern caribou with a savory berry bread pudding, Brome Lake duck with truffle risotto and orange-date chutney or wood-grilled Alberta beef tenderloin with oxtail tortellini, globe artichoke and smoked pepper puree.
