OTTAWA — Miami chef Daniel Buss is returning home to Canada after being named executive chef of Ottawa’s Fairmont Chateau Laurier.
“This is a very exciting appointment for me. It allows me to return to my Ontario roots, all the while, I get to lead a dynamic team in a hotel that holds great history and culinary prestige in Canada’s capital,” said Buss.

QUEBEC — Following recommendations from the Canadian Restaurant and Foodservices Association (CRFA), the Régie des alcools, des jeux et des courses du Québec (RAJCQ), the governing body on permits, is proposing to streamline the alcohol permit process in Quebec by reducing the number of permits in the province’s restaurants.

LAVAL, QC. — Laval-based Rôtisseries St-Hubert Ltd is testing menu changes and planning strategic growth of its 105 rotisseries in the Quebec market with newly opened outlets in recent weeks in Rockland, ON., and Bathurst, NB.
The company expects to add a dozen in Eastern Canada within two years as well as moves into Boston and to Asia according to Daniel Cousineau, president of St-Hubert's restaurant division.

MONTREAL — The Taverne Gaspar, a 120-seat restaurant, has opened on rue de la Commune in old Montreal.
“Following the success of Méchant Boeuf Bar-Brasserie in the neighbourhood, we are very proud to create a new local destination on rue de la Commune,” said Dimitri Antonopoulos, vice-president of Marketing and Development for the restaurant’s parent company, the Montreal-based Pinnacle Award- winning Antonopoulos Group.
