TORONTO — Ritz Carlton’s Toca restaurant is reinventing, with reports chef Gihen Zitouni is now at helm and a new Mediterranean-Canadian menu is being introduced. According to Toronto Life, Zitouni has been with the Ritz-Carlton brand for years, working as a cook at hotel restaurants in Florida, Barcelona and the Caribbean. Most recently she was head chef of the Ritz-owned Arola Restaurant in Portugal. Zitouni replaces Tom Brodi who announced his departure from the restaurant in May, telling Post City magazine: “the vision of the hotel — what the hotel wanted — was different than what we started out with.” The new menu launches Oct. 29.
