|Boulud’s Forager To Speak At Brick Works|

TORONTO — Forager Tama Matsuoka Wong is set to appear at The Evergreen Brick Works in Toronto, Monday, Aug. 13, to discuss sustainable food systems.
“Chefs and food professionals can have a big impact on food sustainability by what they chose to order from suppliers,” Matsuoka Wong said, ahead of her visit to Toronto.
“Chefs like Eddy Leroux at Restaurant Daniel as well as Toronto chefs such as Jonathan Gushue, are looking at specific wild plants and determining what’s the peak season and which parts [of the plant] are good.”
Matsuoka Wong, a former corporate lawyer in Hong Kong, Tokyo and New York, is the resident forager at Restaurant Daniel in New York City, the flagship restaurant of chef Daniel Boulud. The New Jersey native will speak about the virtues of foraging while walking through the ravines on the Evergreen Brick Works property. She’ll also talk about her new book written with Eddy Leroux, Daniel’s head chef de cuisine. A prix-fixe dinner at Brickworks’ Café Belong will follow the foraging tour.
