Todd Sherman, the company’s managing partner and director of Operations, has wanted to complete a brand spin-off for some time. “Although we’re known for our Gabby’s brand, and our up-market Hey Lucy spot, we wanted to take it one step further and provide an upscale, casual spot for Toronto diners,” he said. Hush, an open-kitchen concept, described as a modern, upscale casual restaurant and bar lounge, seats 130 with an additional 70 seats on the rooftop patio. The menu, headed up by executive chef Scott Davidson, includes a selection of global dishes such as steak, prime rib, and slow-cooked baby back ribs. An extensive wine list was developed with master sommelier, Bruce Wallner.
